This fruit wood commercial smoker oven is designed for professional smoking, roasting, barbecue preparation, and slow-cooking applications in restaurants, barbecue restaurants, hotel kitchens, catering kitchens, central kitchens, and specialty meat processing areas.
The oven uses a refractory cast inner chamber with rounded corner design, helping improve heat conduction and internal heat circulation. The stainless steel square outer body provides a clean commercial appearance and does not require additional external decoration.
The unit is equipped with a dedicated fruit wood combustion system. Operators can adjust the air damper to control the burning speed of fruit wood and manage the internal oven temperature according to different smoking and roasting requirements.
The counterweighted vertical sliding door is designed for lighter operation and helps reduce direct high-temperature exposure to the operator. The door height can also be adjusted to help control the temperature distribution between the upper and lower cooking areas.
A fruit wood loading window can be configured on the left side or right side according to site requirements. The standard configuration is on the left side. The loading window side should reserve at least 500 mm of operating space for safe and convenient wood loading.
The oven includes a fire-prevention water spray system. Water can be automatically added to the grease collection tray, and when the exhaust smoke temperature exceeds 140 °C, the system automatically sprays water for cooling. Site exhaust ventilation is required, and the exhaust air volume should be greater than 580 m³/h.
