It is suitable for bakeries, bread shops, pastry shops, hotel kitchens, central kitchens, catering kitchens, food factories, school canteens, and commercial dough processing areas that require controlled temperature and humidity proofing equipment.
The series includes high-end fully automatic refrigerated proofing cabinets, high-end frozen retarder proofers, dual-temperature dual-control retarder proofer models, mid-range frozen fermentation cabinets, and economy refrigerated fermentation cabinets. Tray capacity options range from 18 trays to 36 trays, supporting different bakery production volumes and fermentation workflow requirements.
Selected high-end refrigerated models support -1 °C to 5 °C refrigerated proofing with up to 99% RH, followed by +38 °C to 50 °C proofing with up to 99% RH. Selected high-end frozen models support -10 °C to -15 °C frozen proofing with up to 99% RH, while the dual-temperature model supports refrigerated and frozen proofing zones in one cabinet.
Selected mid-range frozen fermentation models support a wide temperature range from -10 °C to +60 °C and humidity from ambient humidity to 95% RH. Economy refrigerated fermentation models use double-layer foamed stainless steel construction, refrigerated proofing systems, scheduled fermentation settings, fan-assisted temperature circulation, computer control panels, heating, and humidification functions.
