This commercial trolley proofer cabinet series is designed for rack-based dough proofing, refrigerated proofing, frozen proofing, delayed fermentation, humidified resting, and high-volume bakery dough preparation. It is suitable for bakeries, bread production rooms, hotel kitchens, central kitchens, catering kitchens, pastry factories, food processing facilities, and commercial dough production areas that require trolley loading and controlled proofing workflow.
The series includes a trolley-type fully automatic proofer cabinet, a trolley-type fully automatic refrigerated proofer cabinet, and a trolley-type fully automatic frozen proofer cabinet. Each model is designed to accommodate 1 trolley, making the series suitable for batch proofing, scheduled production, and larger bakery operations where multiple trays need to be handled together.
The standard proofer model supports a large trolley size of 670 × 820 × 1735 mm, which can hold 15 trays of 600 × 800 mm or 30 trays of 600 × 400 mm. The refrigerated and frozen models support a trolley size of 470 × 620 × 1735 mm, which can hold 15 trays of 600 × 400 mm. Trolleys are not included as standard and should be ordered separately according to bakery layout and tray specification.
Selected models use intelligent electronic temperature control. The standard proofer model supports proofing temperature from +38 °C to 50 °C with humidity up to 99% RH. The refrigerated model supports -1 °C to 5 °C refrigerated proofing with 99% RH and +38 °C to 50 °C proofing with 99% RH. The frozen model supports -10 °C to -15 °C frozen proofing with 99% RH and +38 °C to 50 °C proofing with 99% RH.
